There’s more to “cakes” than just sweet cakes: sandwich cakes (“smörgåstårtor”) are the perfect main course. Choose from meat/chicken, fish/seafood, vegertarian or vegan. Gluten‐free and lactose‐free also available.
All cake bases are available with reduced sugar or completely sugar‐free and most frostings (e.g. buttercream, cream cheese) are available completely sugar‐free or with reduced sugar. Some glazes (e.g. mirror glaze) are available with reduced sugar depending on flavor. In my baking, I use a stevia/erythritol mixture as a sugar substitute. Stevia is made from a natural plant and it (and erythritol) does not contribute to increased glucose and insulin levels.
All cakes, frosting (including cream cheese frosting) and toppings (e.g. marzipan) are available gluten‐free. Chocolate cake bases are highly recommended as the cocoa I use interacts with baking soda to produce a particularly light and fluffy cake base. But gluten‐free vanilla cake, spice cake or carrot cake are also delicious!
All cakes and toppings are available lactose‐free. Many of my cake recipes use butter, but the small amount of lactose contained in butter is usually of no consequence to the lactose intolerant. However, for those who are exceptionally sensitive to lactose, I can use lactose‐free butter or can avoid butter altogether. My tasty cream cheese frosting is also available lactose‐free.
